Niçoise, originally a composition of the catch of the day with the harvest of the day is a feast of tastes, colours, textures and a visual stunner!
Bohémienne (Bóumiano): delicious cousin of ratatouille
The closet classic “Bohémienne” is not unlike Italian “parmigiana di melanzana”. This nourishing plantified version contains eggplant, tomatoes, cauliflower cheeze, black olives, olive oil and Herbes de Provence and can be eaten both cold and warm. So get out your cutting board, light up your oven and let’s cook together for 2 persons.

And that is exactly my goals: to promote the rustic Provençal familial cuisine that shares so many similarities with the cuisine I grew up on. The cuisine that invites you to cherish the flavors and textures of the produce, that makes you look forward to dance through the next season and that awakens memories.
